Human rights

Our starting point is simple: people should be treated properly. Here, you can read how we approach human rights in our own operations and in the partnerships we are part of.

Climate

Our first climate action plan was developed with VisitAarhus through Climate Neutral Destinations. Not to produce flattering numbers, but to better understand our operations and make better decisions.

When we speak up

How Hærværk takes part in conversations about food, climate, the working environment, education and responsible consumption — openly, respectfully and without paid lobbyists.

ESG and annual progress

Here, we bring together our ESG report, carbon accounts and annual updates.

We do not do this to present impressive numbers — or to make the numbers look good. We do it to understand Hærværk better: our purchasing, our operations, our production, our climate impact and the choices we make every day.

We have principles. We choose organic produce, local ingredients, whole animals, responsibly caught fish and small-scale producers because that is the restaurant we want to be. It does not always look good in a CO₂ account, and many of the small producers we work with do not have large datasets ready for us either.

But that does not mean we should not measure. Quite the opposite. We use the numbers to learn, identify improvements and keep track of where we still need to do better.

We are not finished. We are learning as we go.
